N2O Tanks and Cream Chargers: Which One

Nitrous oxide arrives in two formats. What actually separates them, and which one belongs on your bench.

N2O -- nitrous oxide, sometimes called laughing gas -- comes to a kitchen either as a cream charger or as a professional tank. Chemically it is the same gas. Practically the two are different tools.

A cream charger is a sealed, bench-sized unit at 666 g, 2 kg or 4.33 kg. It attaches to compatible dispensing equipment, gets used through, and gets swapped. Storage is straightforward and keeping a spare is no trouble.

A professional N2O tank at 5 kg or 10 kg is a cylinder. It holds considerably more, it requires a compatible regulator, and it needs a proper place to stand. What it buys is uninterrupted service: no unit change halfway through a busy evening.

Volume decides. A pastry bench plating to order will not benefit from a tank. A hotel kitchen running foams across several services usually will. In between, the question is simply how often a change interrupts the work.

Supplied for lawful culinary and food-service use with equipment specified as compatible in current manufacturer instructions, within the applicable regulations. Inspect before use. Never run damaged, altered or wrongly connected equipment. Follow the manufacturer on handling, ventilation, storage and disposal.
